Mr. Traveler and myself both love pizza…so much that we have tried almost every combination of food on a pizza that you can imagine. So much that ordering pizza from somewhere has become boring. So much that we are now experimenting at home and making our own delicious creations. Last night I made a BBQ Chicken Pizza that was very easy and tasty!
– Pizza Dough (recommend Pillsbury pizza crust or any other premade brand you desire)
– BBQ sauce (recommend Hickory style flavor)
– diced chicken (recommend canned chicken…more cost effective than fresh chicken)
– shredded Italian Blend cheese and shredded mozzarella
– green pepper
– garlic salt
– olive oil
1.) Preheat oven to 350 degrees.
2.) Unroll pizza dough and lightly brush with olive oil on the front and back. Sprinkle some garlic salt over the top of the pizza.
(This time I used a premade crust and it was much easier. We actually bought them on sale at Big Lots; 3 pizzas for $2.80! They were medium sized which was perfect for 2 people. Keep an eye on sales for premade dough. The last time I used fresh dough and it was very hard!! This way is much quicker and easier than rolling out your own dough.)
3.) Drain the water from the chicken. Place in saucepan with BBQ sauce, a dash of garlic salt, and lightly sprinkle with salt and pepper. Let it cook on low to medium heat for 5 to 10 minutes.
4.) While the chicken is cooking, chop the celery, green pepper, and onions. Heat olive oil in saucepan and cook on medium heat until lightly browned. I cooked mine about 10 minutes to get the full flavor.
5.) For the pizza sauce spoon out the BBQ sauce on the pizza dough. You can put as little or much as you like. I completely covered the whole top out to the edge of the crust.
6.) Place the cooked chicken on the top of the pizza. Arrange as you like. Take the cooked vegetables and arrange over the chicken and the top of the pizza. Sprinkle cheese all over the top until covered. If you want it really cheesy pile it on heavy. If you like lighter cheese just put a little bit.
7.) Cook in the oven for 20-25 minutes. I like a crispier crust so we baked it on the oven rack. You can use a pizza pan if you prefer a softer crust.
8.) Let cool for a few minutes before cutting. Serve with celery and ranch on the side.
